I know this isn't "made-from-scratch" Béarnaise sauce, but I supplement the package enough that I think it's worth posting here.
The package mix is McCormick Gourmet Béarnaise sauce:

But I don't follow the instructions exactly. Here's what I do instead:
- Melt a bit less than 1/2 cup (one stick minus about half an inch) of butter in a medium or small-ish sauce pan.
- Remove from heat.
- Stir in the package of mix and 1 3/4 cups of half and half. No foolin'! Use that much half and half. Seriously. It thickens a lot as you cook it.
- Bring to a boil (or near boil). Keep stirring and keep stirring.
- Reduce the heat and simmer for about 3 minutes. Keep stirring and keep stirring to get the melted butter well-mixed in.
- Stir in more half and half if it's too thick.
- Keeps well in the refrigerator for days and days and days and days.
